My husband prefers a bit more mustard, so if you do also just add a couple more teaspoons of mustard.
Paprika sprinkled on top would be a nice touch also.

Couldn't find the original recipe, so improvised with what I could glean from memory...a tortilla dipped in egg batter and filled with warm bananas. A great way to use ripe or overripe bananas! The ripe banana is sweet enough to not require any additional sweetening, and the finished product needs no added syrup!
