This is a recipe made up by my Aunt Becky, who was attempting to make zucchini more to her taste. You can adapt this recipe many ways. You can use any cubed summer squash like crookneck in this recipe. You can also use a fresh tomato instead of stewed.Just add it a little earlier since it is raw, unlike the stewed tomatos. Depending on your pan, like an iron skillet, you may want to add a little more oil if the veggies start to stick, or turn down the heat.
Simple, but great side dish for any Italian main course using the extra pasta sauce that may be left over from your main course.
Also a great alternative to using pastas.
This is my first try at making my own lite version of apple salad. It's really tastey, it makes a lot, and I used it as a side with my meal. Even though my combined meal was 500 calories, I think I can do better. Any suggestions? :)
A little spicy, a little sweet. A great addition to Salmon, but you could try it on pork or chicken too!
This is a staple in my family, with LOTS of healthy variations... Please note that on the salt, I often use sea salt which has less sodium, OR kosher salt... For those who are sodium sensitive, this can be reduced by a half, and the yeast is still happy... This makes either three loaves of bread ( cheaper than store bought, and NO wierd unhealthy additives), homemade pizza dough ( refrigerate first prior to rolling so you can handle it better), home made hamburgur buns are a hit too...

Watching Rachel Ray inspired me! this is 4 (old) Weight watchers points per cup, but MUCH less fat than your average macaroni salad...or for that matter, deep fried jalepeno poppers! This batch is HUGE you may want to cut it in half!
