Decided to make homemade turkey soup after having a turkey for New Years day and didn't want to waste any of the bits and peices.
Had a few Items on hand and wanted to have something that wasn't going to weigh me down for the night.
I found this recipe the other day and really wanted to try it. So this recipe is truly not my own. But I wasn't ready to use up 242 calories for one muffin. So I tweaked the recipe a bit. Thought I would eliminate the fat and the whole egg, and substitute some of the flax meal for oatmeal.
A friend gave me this recipe and I couldn't find anything that was just like it in sparks recipes, so I added it.
Still a little decadent, but certainly better for you then the average scalloped potato recipe!
My kids were wanting hot pockets and so I came up with this idea and they LOVE them!
