These from scratch are not hard to make, just keep fresh buttermilk on hand. Also might need to add more buttermilk to make a thinner consistency.
I love this recipe cooked as either pancakes or waffles. While I have all the ingredients out, I fill individual ziploc bags with all dry ingredients for one recipe then label adding list of wet ingredients to the label. When I'm ready to have them again, I just add wet ingredients and cook.

Using 2 heads of fresh grown Fun Jen hybrid chinese cabbage, or any bok choy (Pak Choi) variety you can make a quick easy dish. Served hot or cold it is yummy. This is also a good soup starter.
