This is an adaptation of an excellent Spark low-fat chocolate cake recipe. I wanted to make it sugar free as well as low fat to shave off some calories. It's about half of the calories of the cake made with sugar.
You'll never believe this recipe! It's incredibly quick and makes a tiny batch of delicious cookies - perfect for two servings (makes 10 little cookies). Easy to adapt to your own preferences - toss in whatever combination of tastes that you like with your peanut butter!

I am a coffee fiend in the morning - it's gotta be organic fair trade french roast, carefully brewed in my Melitta one cup filter! But since I am now trying to avoid cow's milk & soy, and have long sworn off corn syrup and hydrogenated oils, my beloved SF hazelnut creamer is a thing of the past. Sigh.
