Made this tonight for my daughter and I, along side one containing ground beef for the guys. Taste was good, but I think next time I will saute the mushrooms with some onion, garlic, and italian seasoning in cooking spray first - the fresh mushrooms made our vegetarian lasagna too soupy when they leached their liquid into the sauce, and I think that the extra seasoning will really add to the flavor.
These Snobby Joes are certain to plelase both vegetarians and meat eaters alike. Can add ketchup and pickles. Can also serve in lettuce wraps instead of on buns.
I give credit to JENNLOVE for inspiring this recipe with her Crustless Spinach, Onion and Feta Quiche recipe. I love to wander through the farmer's market, pick out the seasonal fresh vegetables, and figure out later what to do with them. This is how this dish came to be. Because of the skim milk and reduced amount of eggs, it is more similar in texture to a frittata than a true French quiche, which is richer and creamier. But it is still very good and makes a good dish for dinner or a nice Sunday brunch. My son (Mr. I-Hate-Quiche) loved this and gobbled down two slices.
This is healthy veggie wrap with a Mediterranean twist. You can use more or less veggies depending on the size tortilla you use. Kalamata olives are also a nice addition if you use a fat free or low calorie greek dressing. Enjoy!

I usually make this with some low fat balsamic dressing. Sometimes I add or subtract vegetables, depending on what's available. If you would like to make it lower in fat, omit the almonds or the feta. Delicious on it's own.
Great for leaving in the fridge for when you're hungry in a hurry.
3 cups Kellogs all bran
pour 2.5 cups hot water over, let set 5 minutes
Add 1 box Krusteaz or other brand muffin mix (any flavor) (12 serving size)
add 1.5 teaspoon baking soda
Mix lightly
Makes 17 to 18 muffins Bake 350 15 to 20 minutes
