Adapted from the Whole Foods recipe "Tofu and Vegetable Loaf." The consistency of this version of the dish is similar to that of a quiche. We enjoyed it very much.
The veggie mix makes enough for 2 batches of this recipe. The nutritional information is set for using half of the mixture.

This is to make a base that can be added to soups, and sauces. I use about 1/5 of this per jar of regular tomato sauce. Great way to add some extra veggies if you have picky eaters.
I like to eat oatmeal in the morning, but using too much milk and brown sugar made it more like dessert (calorie wise too!) So I tried supplementing things for milk. I alos like putting fresh fruits on it as well.
We made up this recipe because we liked Chicken Mancaroni from our favorite restaurant. We made it healthier by adding veggies, no chicken .... you know... it's still awesome!
This was my attempt at recreating the vegetable fried rice I used to get at Chinese food places... in a healthy way.
Nothing is fried, everything is boiled, so this can be done in one pot on the stove.

Whole wheat pasta with zucchini, tomatoes, garlic, and onions in a olive oil sauce.
The wheat germ is the secret ingredient. You could make it with bread crumbs, but I always use wheat germ. Because the eggplant is oven baked instead of fried, it's way lower cal and fat than most. I also use cheese sparingly, and make my own tomato sauce, so the sodium is much lower. (Note, this recipe is calculated with a generic, high-sodium tomato sauce because I was too lazy to try and recreate my own here so it shows a sodium level much higher than my actual dish.)
This was originally my recipe for vegetarian lasagna that I modified to compensate for my laziness.
This was a desperate attempt to make a nice macaroni and cheese that wasn't the typical American cheese food blended with milk.
The jalapenos and the mixture of cheeses makes this dish creamy, spicy, and with just a small hint of the ooey-gooey dish from our childhoods.
