I really liked this recipe. Since I had chicken stock and not vegetable stock that is what I used. The soup tastes very good and looks kind of fancy since it's pureed. I used an immersion blender. I agree with someone else that the nutrition facts seem off, .83 cup of broth is not 162 calories. Submitted by:

Used homemade turkey stock, got a little heavy-handed with the ginger but after adding sour cream
-- tastes great!
Do question the detailed nutritional info -- can't figure out 160+ calories in less than a cup of vegetable broth & where 9 grams of fat comes from, since sour cream is optional.

I made half this recipe, because I only had a pound of carrots. I skipped adding the ginger, lemon juice, and garnishes, and added 3 baby zuchinni and 4 baby squash. Hardly any salt, I did brown the onions, I used a packet of "consomé" and homemade chicken broth and it was AMAZING. YUM YUM Submitted by:
