Ingredients

    2 tbsps Extra Virgin Olive Oil
    1 large onion cut into medium dice
    1/2 tsp sea salt
    2lbs carrots, peeled and cut into 1/2 inch rounds
    5 cups of vegetable stock
    1/4 cup rolled oats
    1 1/2 tsp ginger juice
    1 tsp lemon juice
    Salt and pepper to taste (optional)
    Garnish with 2 tsp of dill and dollop of plain yogurt (optional)





Directions

In a medium-sized pot, heat oil over medium heat. Add onions and salt. Sweat until onions are soft (about 5-8 minutes). Stir often to prevent browning. Add the carrots, cover pot and cook over low heat for 5-6 minutes. Stir to prevent browning. Add stock and oats to pot. Raise the heat and bring to a boil. Reduce heat to low and simmer 25 minutes until carrots are tender. Pour contents of the pot into a blender. Blend the soup until creamy. Add additional stock to desired consistency. Add lemon and ginger juice. Readjust seasonings. Garnish with a dollop of yogurt and dill and serve.

    Incredible!
    I really liked this recipe. Since I had chicken stock and not vegetable stock that is what I used. The soup tastes very good and looks kind of fancy since it's pureed. I used an immersion blender. I agree with someone else that the nutrition facts seem off, .83 cup of broth is not 162 calories. - 8/19/18

    Used homemade turkey stock, got a little heavy-handed with the ginger but after adding sour cream
    -- tastes great!
    Do question the detailed nutritional info -- can't figure out 160+ calories in less than a cup of vegetable broth & where 9 grams of fat comes from, since sour cream is optional.

    Incredible!
    I made half this recipe, because I only had a pound of carrots. I skipped adding the ginger, lemon juice, and garnishes, and added 3 baby zuchinni and 4 baby squash. Hardly any salt, I did brown the onions, I used a packet of "consomé" and homemade chicken broth and it was AMAZING. YUM YUM - 8/17/11
