I forgot to buy mint, red onion and lime juice. So instead I used half a red pepper, lemon juice, and a dash of cayenne pepper for a kick. I served it on 2 warmed 6 inch corn tortillas (I used cooking spray and a fry pan to warm them). 337 cal, 40 carbs, 7 grams fat, and 30 grams protein.
