Made this and added some low sodium beef broth and a big can of tomato puree and made cabbage roll soup.
This was very yummy. I will add some more salt next time I make this. Maybe try a soup with some herbs.
Delicious! I modified it a bit, using ground turkey breast (99% fat free), Low-Sodium V8 (10 oz) instead of tomato soup, and Hunt's No-Salt Added tomatoes. That gets it to about 175 calories and under 100 sodium per serving!
One problem -- I can't stop eating this!! Made it for dinner last night, then had a cup for breakfast and just had 2 cups for lunch! Hubby loved it but kids wouldn't touch it. My subs were 20 oz ground turkey and 1 c minute brown rice. Made 12 cups. 1c = 142 cals & 12g protein. Thank you, thank you!
I substituted a bit of Southern to it- Using Smoked Polish Sausage, browned and cut into bite size pieces intead of the Ground Tky or Beef. It gives it a Smokey flavor dispite adding a little more fat to the Calories.
Really tasty, and very easy. Wasn't sure what size can (14.5 oz. or 28 oz.) of diced tomatoes, though. Subbed long grain brown rice to up the fiber. Added a splash of garlic chili pepper sauce, which was like gilding the lily. YUM!
