Tasty way to use the red cabbage i received in my weekly veg box. I used red wine vinegar. I had to replace the apple juice with a more apple + water + brown sugar because i did not have any in the house.
DH made this for me ~ tastes perfect! A nice balance of sweet & tart, with no sugar or oil to add calories. Just like what my Dad used to make (his parents immigrated from Germany). Ate two cups with a little smoked sausage for dinner, and it was filling & satisfying. Definitely will make again!
Easy to fix, lots of vitamins and minerals, low in cals and sodium..great tasting cold..served as a alternative to coleslaw with a twist..tastes great..prep time quick
