I will make a batch of this at the beginning of the week and add onto salads, pitas, side dishes etc. (in addition to the chicken and salsa, I'll variably throw in a bag of frozen veggies, black beans, chopped green chiles etc.) Top with a spoonful of non-fat greek yogurt instead of sour cream. I make a very similar dish but saut chicken, mushrooms and onions on the stove, add in a large jar of Chi Chi salsa and chili powder to taste. Excellent served in warm soft tortilla shells with cheddar cheese and fat free sour cream. Submitted by:

I stirred in 2 tbsp. of low fat sour cream to make sort of a sauce. Also, the directions don't mention it, but it's best if you layer the chicken breasts and taco seasoning, then pour the salsa over the top of everything. You can even use the chicken breasts frozen, for busy mornings. Submitted by:
