Really yummy. I didn't cook the eggplant long enough so it was a bit mushy in the middle. Should cook for full directed time. ;) Still really good! I added sprinklings of fat free feta, mushrooms, chopped spinach and a little brie. Yumm!
Very Good, Low on Calories and Cholesterol, but was missing all trace of Parmesan. Was that an oversight?
