Ingredients

    1 whole egg
    3 egg whites
    1 tbls lite sour cream
    2 tbls Hormel Bacon Bits
    1/4 Cup Sargento reduced Fat Sharp Cheddar Cheese
    1 cup chopped fresh spinach
    1/4 tsp oil
    1 tsp Chicken broth

Directions

Whip eggs and sour cream together.
Heat nonstick pan. Add oil and broth. Pour egg mixture in.
Top with spinach, bacon and cheese.
Cook over med heat with lid on pan until set.

    Good idea, but, for me, some alterations: egg substitute, turkey bacon and, possibly, plain lowfat yogurt. I love spinach omelettes! - 4/20/10
