Introduction

I came up with this recipe one night when I had only a few ingredients in the fridge and needed to find a way to make them into a meal. These surprised me with how delicious they are. Number of Servings: 6

Ingredients

    1 lb Ground Hot Italian Sausage
    1 cup Part Skim Ricotta Cheese
    1 cup Frozen Spinach, thawed and drained
    4 Garlic Cloves, minced
    2 Roma Tomatoes, diced
    1/2 tsp Sage
    Handful of Chives
    Pinch of Lemon Zest
    Pinch of Onion Powder
    Pinch of Black Pepper

Directions

1) Preheat oven to 400 degrees

2) Spray nonstick cooking oil on a cookie sheet.

3) Slice tomatoes in half and squeeze juices out over the sink before dicing them. This will prevent meatballs from being too watery

4) Mix all ingredients together (with hands) and roll into 6 balls

5) Place balls on prepared cookie sheet and bake in oven for about 25-30 minutes

    You may want to change this to "sausage AND veggie meatballs", I'm a vegetarian and I was uber excited to see someone with a veggie ball recipe...much to my dismay. Bummer. But they sound delightful:) - 12/15/09

    This is great and not a lot of fat or calories. I also served some "No Yolks" noodles along side which are very low in fat and cholesteral. Made a great meal! - 12/1/09

    Awesome! The whole family loved this. I did add 3/4 cup brown rice and I wrapped them in cabbage, topped with canned Italian tomatoes. Wonderful! - 1/4/10

    These were amazing. Loved them! Followed directions to a "T" and they came out great. However, where did you find sausage that was so low in fat/cals? I had to redo the ingreds. because my sausage was 200 cals for 2oz! I was also able to get nine BIG meatballs out of this. It was worth it! - 1/25/10

    My family loved these! My daughters kept sneaking them out of the serving bowl before dinner. The only changes I made were to add about a 1/4 cup of part skim mozzarella/reduced-fat cheddar cheese, and I left out the tomatoes because I didn't have any.     This was better than my husband and I expected it to be, a pleasant surprise! It was an easy week night meal. My husband preferred to eat it with rice.
