Number of Servings: 10

Ingredients

    1 cup banana, mashed
    1/4 cup butter, softened
    1/4 cup water
    1/2 cup applesauce, unsweetened
    3 large eggs
    2 cups whole wheat flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 cup chopped walnuts

Directions

Preheat oven to 350 F or 180 C.
Grease and flour a 9 x 13 inch pan.
Beat together mashed banana and soft butter until creamy.
Beat in water and applesauce.
In a separate bowl, beat eggs until very foamy.
Mix eggs into banana mixture.
In a separate bowl, blend flour, baking powder, baking soda and cinnamon; add to banana mixture and beat until very smooth.
Stir in walnuts.
Cook at 350 for 20 minutes or until knife inserted comes out clean.
Cool and eat. Serves 8 - 10 (nutritional count uses 10 servings.)

    The other comments on it were: I changed the recipe a bit. Added extra 1/4 c. mashed banana, 1/4 c. applesauce, 1/4 c. butter, 1/2 c. Splenda, 1/2 c. water. added 5 min baking time Used SF cr cheese frosting. 8 oz cr cheese, 1/2 c. butter, 1/3 c. Equal, 1/2 c. Splenda and 2 ts 090106 - 1/6/09

    Very Good
    I changed the recipe a bit. Added extra 1/4 c. mashed banana, 1/4 c. applesauce, 1/4 c. butter, 1/2 c. Splenda, 1/2 c. water. Increased baking time by 5 min. Used sugar free cream cheese frosting. 8 oz cream cheese, 1/2 c. butter, 1/3 c. Equal, 1/2 c. Splenda and 2 tsp vanilla - 12/19/07

    Based on the other comments I doubled the applesauce and used apple juice concentrate instead of the water and it turned out well. I was making the cake for a little boy who cannot have sugar, so instead of the whole wheat flour I used white flour for a lighter flavor. Will make again. - 9/9/07

    I made this cake for my father in law. It is his birthday and he is diabetic. He liked it very much. I tried it, it was a little dry but I put cool whip lite on it and it wasn't too bad. It wasn't sweet but that was the whole point of making it sugar free. Probably want try again though. - 4/26/07
