Sauteed Shrimp Salad
This salad may vary in total calories depending upon dressing choices and method of cooking shrimp. I sautee the shrimp in a tbsp of olive oil, chopped garlic and a little teryaki marinade. The bacon that I use for "bacon bits" is a very nice lean, center cut bacon (strips) available at Vons/Safeway. I counted 1 strip as one serving. There were two strips per salad serving. The pine nuts and crumbled reduced fat blue cheese are a garnish and sparingly used.
