Number of Servings: 6

Ingredients

    3 quarts of water
    1 lb boneless, skinless chicken breast-chopped in 1" cubes
    2 cups sliced zucchini
    2 med. celery stalks, quartered lengthwise and chopped
    1 med. head of cauliflower, cleaned, florets only, without stalks
    1 package frozen peas
    1 package frozen sliced artichoke hearts
    1 tbsp dried basil
    1/2 tbsp onion powder
    1/2 tbsp garlic powder

Directions

In a 5-6 quart pot, put in the water, chicken, celery, basil, onion powder, and garlic powder.
Bring to a boil and simmer covered for about 30 or 45 minutes.
Add the cauliflower and zucchini.
Continue to simmer uncovered for another 15 minutes.
Add frozen peas and artichoke hearts.
Simmer for uncovered another 15 minutes.
Serve. Should make about 6 to 8 two-cup servings.

    Tasty. Adding tomato sauce, as someone suggested, would ruin it in my opinion. How about adding a few mushrooms instead of artichoke hearts and fresh peas instead of frozen? - 7/8/10

    Sounds great! I am looking forward to trying this recipe. I will probably partially blend it because I find that thickens soup nicely while still leaving some nice chunks to munch on. - 7/9/10

    I will make this the first cooler day we get. I want to use fresh basil and garden diced tomatoes as a garnish. And sub edemmae for the peas. I'm using yellow squash AND some zucchini seeing it is summertime. I'll use just zucchini in the winter months. Scallions. This is a great recipe. Thank! - 7/8/10

    I made this today and added ingredients a couple of extra ingredients, 1 small can of tomatoe sauce to make it "Italian" and a couple of boullion cubes. I felt something was missing in the flavor department. - 4/2/08
