Ingredients

    SLICE EGGPLANT ABOUT 1 INCH THICK

    PUT EGG INTO A BOWL AND SCRAMBLE UNTIL FOAMY

    1/4 TO 1/2 CUP WHOLE WHEAT FLOUR

Directions

PLACE A SKILL OR GRILL ON STOVE WITH 2 TABLESPOON OF OIL OLIVE OIL, OR CANOLA.
TU RN ON AND GET HOT.
DIP EGGPLANT IN EGGWASH THEN IN FLOUR AND PLACE IN HOT SKILL FRY ON EACH SIDE UNTIL GOLDEN BROWN. TAKE OUT AND SEASON WITH SALT AND PEPPER.

    This was very good. I seasoned the flour with Tastefully Simple Seasoned Salt instead of seasoning it at the end. Turned out great! - 4/2/09

    I've made fried eggplant but used instant potato flakes after the egg wash and baked in the oven with a little EVOO on cookie sheet to keep from sticking. Yum-Yum! - 2/13/08

    This is a great recipe. I coated the eggplant in seasoned breadcrumbs and added a little Parmesan. I was yummy. My son called them Eggplant steaks. The whole family enjoyed it. - 5/12/09

    I did what a previous poster did and coated the eggplant slices in with instant potatoes after the egg wash and then baked them until golden and crispy with lots of spices, YUM! - 3/10/08

    I cut my eggplant thinner -- about a quarter inch -- and use breadcrumbs or Cracker Meal. I absolutely LOVE eggplant this way. - 1/13/08
