Ingredients

    1 bag 32 0z frozen southern style dices hash brown potatos, thawed
    1/2 cup chopped raw onion
    i medium stalk celery, diced 1/2 cup
    2 cans (14 oz each) 99% fat free chicken broth
    1 cup water
    3 tablespoons Gold Medal all-purpose flour
    1 cup milk
    1 bag shredded colby-jack cheese
    1/4 cup Bac-o bacon bits
    1/4 cup green onions

Directions

1) In a 3 to 4 quart slow cooker, mix potatoes, onion, celery, broth and water

2) Cover; cook on low heat setting 6 to 8 hours

3) After 5 hours add bacon bits, so flavor soaks into soup

4) In a small bowl, mix flour into milk; stir into potato mixture. Increase heat setting to High. Cover; cook 20 to 30 minues or until mixure thickens. Stir in cheese until melted. Garnish with green onions. Sprinkle with pepper if desired.

    Paul!!! The soup was fantastic! I substituted FF cheese and FF milk. I also measured it out and it made 8 cups of soup, so instead of the 6 servings, I changed it to 8 servings of 1 cup each, which brought it down to 171 calories and 0.9 grams of fat per cup! Woot Woot! A new staple food! - 11/20/07

    I MADE THIS SOUP LAST NIGHT AND WOW! WHAT A HIT! I DID MAKE A FEW CHANGES!

    I USED REAL POTAOTES,BECAUSE WE ALL KNOW THEY ARE LOWER IN CALORIES AND BETTER FOR US! I ADDED A LITTLE SEA SALT TO GIVE IT JUST A HINT MORE FLAVOR! AND I JUST HAD TO ADD SOME GARLIC AND A LITTLE GRATED CARROTS!

    I added minced garlic and some sea salt to it. We had it for dinner along with crusty bread adn a sald. I also offered a dallop of fat free sour cream to give it that loaded baked potato flavor. Yummy...wonderful comfort food! Thanks for sharing!!! - 11/14/07

    I made this for dinner this week. I used potatoes o'brien which already had bell peppers and onions cubed up in it. It was VERY good. Husband and the kids liked it too. Super easy. - 1/17/08

    I used real potatoes (lower in calories less fat) then added some southwest seasoning of my own. I also substituted low fat cheese. Turned out great but I think next time I would rather have a few real bits of well drained bacon sprinkled on top. - 11/20/07

    This soup is very easy and extremely tasty. Two cups of cheese seems to give it the perfect consistency. Try using refrigerated diced potatoes with onions for chunkier potatoes and no onion chopping! - 11/18/07

    Love the soup but don't use the flour. I also use raw diced potatoes and real unpreserved bacon instead of the packaged hash browns and the baco bits (can't do soy). It takes a bit longer, but the results are sooooo worth it! - 1/23/18

    This was quick and easy and quite good! I used two pounds of potatoes because we need to use a bunch up. I just chopped them up then mashed them at the end. Also, we didn't have bacos so I used some turkey bacon. Easy substitutes and it was yummy! - 3/8/12

    Fantastic! I made some changes: added carrots, peppers, peas and mushrooms. used real potatoes and left out the bacon. I used low sodium vegetable broth and decided to make the recipe stove-top. I will definitely make this again after I finish the leftovers from this one of course. - 1/28/19

    I switched things around. I used homemade chicken stock, fresh shredded red potatoes instead of the frozen, left out the bacon bits and changed out the Colby-Jack cheese to Mozzarella and used almond milk instead of regular milk. It probably wasn't as rich as the original recipe, but delicious! - 1/18/18

    Why the frozen potatoes? Grated fresh worked fine, just add it to the aromatics before sauteeing. Bac O Bits sounds awful, I crumbled real bacon, baked crispy. And I grated my own cheese. The frame of the recipe is great, straightforward, but I don't use prepared ingredients. - 1/18/18
