Number of Servings: 2

Ingredients

    1 grapefruit
    1 teaspoon honey
2 teaspoons shelled and finely chopped pistachios

Tips

Try this for an afternoon snack or after-dinner treat.

Directions

Preheat oven to 325 degrees.

Slice the grapefruit in half.
If your grapefruits are tipping over, use a knife to remove a thin layer from the bottom, taking care not to expose the flesh.
Use a paring knife to separate the grapefruit segments (optional). Run the knife between the inner flesh and the white pith between the flesh and rind.
The grapefruit halves on a rimmed baking sheet and top with the honey and chopped pistachios.
Bake for 15 minutes.

Serve warm.

Serving Size: Makes 2 servings, 1/2 grapefruit each

Never liked grapefruit (too bitter) but this recipe is fabulous! I tried it w/honey on 1 side of my half, and blueberry jam on the other. Both were tasty, but the jam was sweeter so I liked that better. I also topped w/sliced strawberries and grapes (which were particularly good). Thanks, Chef Meg! - 3/4/12

Please be mindful of any prescription medications that might react with grapefruit or grapefruit juice. I love grapefruit but can't eat it now because I take a cholesterol medication, generic for Lipitor. Read labels on your medications! - 3/28/13

Back in the '70's when I was in Weight Watchers, we had a recipe for broiled grapefruit, much like this, but without the nuts, and broiled for a couple of minutes instead of baked. - 2/6/12

I learned to like grapefruit after I learned to peel it and take the sections out rather than try to scoop out after it's cut in half. I found that leaving all the pith and peel behind made the grapefruit sweeter in the bowl... Now I'm going to do this and drop a few drops of stevia on it.. - 3/28/13

We would eat grapefruit just like this (not baked) with our meals so this is so refreshing, a comfort food for me. Simply and yet, filling. The skin is what makes it bitter to me and the nuts add crunch the honey, a touch of sweetness. You could probably do any citrus like this. So good and go - 2/7/21

I have a slanted knife with serrated edges to loosen the grapefruit and separate the segments. I put maple syrup or honey or brown sugar on it . I don't bake mine but put it under an eye level grill. Then I put pre toasted sunflower seed on top. Oranges make a good substitute. Both are lovely!

nice way to help a grapefruit that may not be the sweetest. Never would have thought of adding pistachio. I sometimes do a touch of ginger powder or cinnamon or both too. - 12/29/16

If baking makes grapefruit sweeter, why do you need to add honey? Or, if honey makes the grapefruit sweeter, why bother to bake it? Actually, ripe grapefruit doesn't need a sweetener at all. - 3/28/13

Yes! This is the kind of recipe that I would expect to see on site like SparkPeople. Healthy, clean and simple. The honey could be optional. The pistachios add the protein. Maybe a few more pistachios on top if you ditch the added sugar. Also, agave might be a better choice for sweetener. - 3/28/13

I am not a grapefruit fan but I do eat it occasionally. This sounds really good and I have it in the oven now, smells good too! I used chopped walnuts since I don't have pistachios. Ok, its done so I will see if it is as good as it smells. Ok, it was delish!!! I really like this recipe, its a keeper - 3/28/13
