I liked this so much that I made it 2x this weekend. The zucchini was so juicy when cut about 1/3" thick. I didn't use the red peppers this time, but I did add sliced mushrooms and some fresh spinach. To me it was something you would get in a restaurant and was so good you didn't even need meat!! - 4/7/08

awesome, and to the question of what is orzo here is your answer on what it is.... Orzo (from Latin hordeum, sometimes called Italian rice) is Italian and means "barley," but in common usage in the United States, orzo is understood to mean rice-shaped pasta, slightly smaller than a pine nut. I absolutely love this recipe... and I know I'm not a great chef or anything, but I didn't realize the veggies would come out so tasty by oven roasting them. They were fabulous. All the adults who tried it agreed, although I still couldn't get my kids to eat these veggies. - 4/19/09

I am definitely going to try this! But I would serve with cubed tofu instead of meat, and I would use Olive Oil spray on the veggies to REDUCE FAT (even though it is good fat) and CALORIES. I would also use goat cheese instead of Feta to REDUCE SODIUM. - 4/1/08

We love roasted vegetables in the winter (don't like using the oven for extended lengths of time in the summer) and we love orzo. Will definitely make this with a change up of the vegetables, such as carrots and turnips instead of zucchini and tomatoes (can't get my boys to eat them anyways). - 11/9/09

Very good, will def.make again. I didn't think the orzo would have enough "saucey" taste but it def. did. I stirred in some shrimp that my husband had cooked with some creole seasoning and this gave the dish a kick! delish!! - 2/13/11

Great flavor! I used larger quantities of vegetables, added mushrooms & green beans, and also used proportionately higher amounts of feta (reduced fat) and oil. Yielded 6+ servings at about 300-350 calories per. Great main dish with the extra feta! - 6/22/10
