Introduction

Ingredients

    1 T sesame oil
    8 oz tofu shirataki noodles
    1 cup bamboo shoots
    1/2 cup shiitake mushrooms
    2 T Kikkoman soy sauce
    1 C stir-fry vegetables (frozen)

Directions

Combine oil and soy sauce in wok and preheat over medium heat.
Prepare shirataki noodles per package directions.
Add noodles and frozen vegetables to wok; stir fry until mixture is heated through but vegetables are still crispy.
Add bamboo shoots and shiitake mushrooms; heat through.
Makes 2 servings of about 2 1/2 cups. Simple, quick, delicious and deceptively low in calories!

    Wow, I just made this for dinner and it was AMAZING. I used reduced sodium soy sauce and thanks to one poster's suggestion, I made my own peanut sauce with natural peanut butter and peanuts. I also added cabbage and bean sprouts. Never tried Shirataki noodles before, but LOVE them! Thanks! - 8/25/08

    I love shirataki noodles as a substitute for pasta but didn't like the odor at first. Once I followed the package directions and rinsed them very thoroughly several times before parboiling for 3 minutes the odor issue was resolved. It's a very important step! - 2/28/10

    I have found that the tofu shirataki noodles are always hit and miss with people - if you're interested in the noodles but they're a little weird for you, try a slightly creamier sauce - like mix some low fat sour cream with one wedge of light laughing cow cheese - helps make it "noodlier"! - 1/10/09

    Being a vegetarian, this meal is made to order perfect.

    Great recipe! There's nothing better than noodles on a cold evening (or for breakfast!)... I substituted fresh veggies and low sodium shoyu, and think that any kind would be good. My husband added an egg to leftovers for a protein punch. Yum! - 1/16/10

    Sodium warning....only 1 TBSP of soy sauce is being figured in this recipe...yet recipe calls for 2 TBSP...going to try it with soba noodles and the 1 TBSP soy sauce (but will use low sodium sot sauce)...will update if it comes out well.... - 11/2/10

    This was very good! I couldn't find the shirataki noodles, so I substituted whole wheat noodles instead. The flavor was good, but could have used a little more spice. I added a little ginger and sesame seeds and substituted coconut oil for the sesame oil. - 2/11/13

    Shirataki noodles are available in Longos, though they have only 2 varieties so far, i.e. the tofu ones. Wellworth it with 20 cals / packet and a lot of fibre, so the net carb comes to only 1 gm. - 8/11/11

    Noodles were interesting. A bit chewy. Definitely do the rinse, parboil routine. Added a few more red peppers. Maybe cut shoots in half and add sprouts.     I just made this tonight and it was delicious. I changed it up a little - I used fresh veg - onion, carrots, cremini mushrooms, kale and scallions. I sauteed in a little olive oil in a non-stick pan, added a little soy sauce with each veg and noodles and then finished with some sesame oil. - 9/1/10

    I LOVE shiritaki noodles. We have a store in the south that carries all these wonderful "out of the norm" items so I'm blessed. The texture--is a bit like raman noodles (without the fat). Being soy, they take on the flavor of anything and are fabulously good. Thanks for sharing! - 2/8/10
