Number of Servings: 6

Ingredients

    2-- 5 oz. cans of chicken breast meat; drained and rinsed.
    1 medium celery stalk finely diced
    1/8 medium onion finely diced
    4 tbsp kraft light mayo
    salt and pepper to taste
    shredded taco cheese
    6--8" soft taco shells

Directions

Mix the first 5 ingredients in a bowl.
Take 1 soft shell, spread a bit of the shredded cheese in the bottom. Spoon 2 oz of the chicken salad mixture on top of the cheese. Top with a bit more cheese.
Roll up and eat, or for a change, spray the outside with a bit of Pam and heat in a skillet until the cheese melts.

    I add about 4 tbsp of salsa along with some lettuce, but nix the onions. It's really good! Everyone who ate it, loved it - 7/7/09

    Incredible!
    Excellent! I've made this several times and everyone loves it! Also great to put on top of a salad to cut out even more carbs. I added celery seed to the seasoning also. - 6/12/11

    I would use fresh cooked chicken breast instead of canned, along with salsa and lettuce as mentioned before. - 12/8/09

    I prefer fresh chicken breast, but for a quick lunch or dinner without all the clean-up...
