A yumm-o hearty soup that soothes the soul. A yumm-o hearty soup that soothes the soul.
Number of Servings: 14

Ingredients

    3 lbs frozen (or fresh) mix of favorite veggies
    3 lbs ground turkey
    12 cups low sodium beef broth
    6 cups water
    5 cups tomato juice, without salt

Directions

Start broth, tomato juice, and water boiling.
Add veggies to pot.
Brown turkey and add.
Let come to a rolling boil and turn down heat so that it remains at a slow boil for about 45 minutes.
Stir frequently.
Allow about 10-15 minutes more for fresh veggies.

    Very good and easy! I added a lot of tomatos to mine and some extra tomato juice. Mine came to about 312 calories a serving! - 9/23/12

    Incredible!
    This soup was very good! I only made 1/3 the recipe since there are only 2 of us. I used the Veg-All Summer Blend frozen veggies (zucchini, yellow squash, carrots, green beans, onions). It was most excellent! - 1/15/11

    I don't know if this is filling enough for a winter meal. My family is hungry at dinner time. I think I will add some potatoes, or rice. - 8/9/09
