Ingredients

    1 egg
    3 egg whites
    1/2 cup sliced asparagus
    1 medium mushroom
    1/4 cup + 1 Tbsp. low-fat Cheddar cheese
    1 Tbsp. light butter
    Salt and pepper to taste

Directions

Beat egg and egg whites as if making scrambled eggs. Add salt and pepper to taste.

Slice asparagus into 1/4" slices, keeping the tips whole. Chop the mushrooms, then saute the asparagus and mushroom in the 1 Tbsp. of butter.

Pour egg mixture in a clean skillet to make the omelet. Add asparagus and mushroom mixture before folding omelet over. Top with 1 Tbsp. of cheese.

    Skip the low fat and eat real food - use whole eggs, and get all the nutrients they have to offer. Not only is it much better tasting, but it is healthier and low carb.

    According to Medical News Today website: Egg yolks contain at least seven essential minerals, including: calcium, iron, magnesium, phosphorus, potassium, sodium & zinc. Also 5 B vitamins, and vitamins A, E, D and K. Why not use whole eggs in your recipes? - 5/3/21

    Recipe instructions don't say where to use the 1/4 c. of cheese. Also the Tbsp of cheese is not counted in the nutritional Info. Try proofreading. Either way asparagus omelet is delicious. - 5/3/19

    The photo shows an omelet with cheese inside and nine in top. The recipes talks about sprinkling some cheese on top, but says nothing about putting cheese inside the omelet. Why is it that your photos rarely match your recipes? Makes me wonder if they are even tested ... - 5/3/16
