Introduction

Tastes like a Snickers, but made with ingredients that are good for you! These are a heart-healthier Valentine's treat. Tastes like a Snickers, but made with ingredients that are good for you! These are a heart-healthier Valentine's treat.
Number of Servings: 12

Ingredients

    2 cups whole pitted dates
    1 cup roasted almonds
    1/2 cup chocolate chips (semi-sweet or unsweetened, according to taste)
    1 T peanut butter (preferably natural)



Directions

In a food processor, chop almonds until coarse and consistency of bread crumbs. Add chocolate chips,dates, & peanut butter. Mix until ingredients start to ball in the bowl. Line 8x8 pan with parchment paper. Spread mixture evenly in pan. Top with another piece of parchment and smooth. Refrigerate for two hours, minimum, before using a heart-shaped cookie cutter to cut them bars. Keep refrigerated in a well-sealed container for up to a week.

Serving Size: Makes approx 14 servings

    This does taste like a Larabar, and not like a Snickers bar. I would prefer more flavour from the chocolate and less from the dates, but it is still good.
    I cut mine in 24 bars for a smaller snack, bringing the calorie count under 100 per piece.

    PEGGIE0203's comment is about right I think - it needs cocoa/cacao in it to make it more chocolatey tasting (leave out the chocolate chips) and the portion size at 193 calories is too high - making them half the size is a good idea! Vanilla would bring out the chocolate flavour too. - 2/3/16

    I took the suggestions & added some cocoa to the mix and a dash of vanilla. I'd like to test this recipe using black beans at a later time for more fiber and cause I'm not really a date lover though I enjoyed the results.
