Introduction

Intended to be gluten free and depending on your low carb journey, a low carb treat. Intended to be gluten free and depending on your low carb journey, a low carb treat.
Number of Servings: 12

Ingredients

    1 cup shredded coconut
    3 cups almond meal or almond flour or a mix.
    1 tsp cinnamon
    1 tsp ground cardamon (or less)
    1/2 tsp nutmeg

    1/2 tsp guar gum
    1 stick butter (1/2 cup)
    1 tsp vanilla extract
    2 large eggs
    3 tbsp honey
    1 Tbls orange zest (optional)

Tips

Splenda can be used instead of honey.


Directions

Cream butter with guar gum, then gradually add in vanilla, honey, zest, and eggs.

Stir together coconut, almond meal and spices.

Use scoop or make small cookie balls. Press flat before baking.

Drop by tablespoons onto cookie sheet

flatten each one (I use a glass)

Bake for 18 minutes

Serving Size: makes 36 cookies - 12 servings
