Introduction

A great low GI soup, part of the 'Kick Start' diet which is great cold or hot and tastes yummy! A great low GI soup, part of the 'Kick Start' diet which is great cold or hot and tastes yummy!
Number of Servings: 14

Ingredients

    1kg of Carrots, Raw (Peeled, ends chopped off)
    1x Bunch of Celery (including leaves)
    1x Bunch of Spring Onions (Shallots)
    2x Cups of Green Beans
    3x Green Capsicums (Sweet Green Bell Peppers)
    3x Large Tomatoes
    2x Cans of Crushed Tomatoes (I use the 300g ones)
    2x Large cans of Vegetable/Chicken/Beef Liquid stock (I usually use a Chicken Stock and a Vege one)
    2x Stock Cubes - again you pick the flavour you want
    1x French Onion Dried Soup pack (I use Maggi)
    1x Cup of Water

Directions

Makes a huge pot.. not really sure how many servings!! Maybe.. 12 - 16...

Chop up all the vegetables into small pieces and put in large soup pot

Add the cans of tomatoes

Add the water, liquid stock, stock cubes and soup mix

Bring to the boil and then leave to simmer... stirring regularly

Once the ingredients are cooked the soup is done...

I usually put it in the blender at this point which makes it a really, really thick liquid soup - I'm not a fan of the chunky soups, but you dont have too!
