Introduction

A simple, low-fat spinach side dish A simple, low-fat spinach side dish
Number of Servings: 4

Ingredients

    2 packages of frozen spinach
    Salt to taste
    3 cloves of garlic, finely chopped
    1 tbsp of course ground/fresh ground black pepper
    2 tbsp of extra virgin olive oil
    1 tsp ground cumin
    1 medium red onion, finely chopped.

Directions

Microwave the frozen spinach to thaw.

While that's thawing, saute the chopped red onion in the olive oil until softened (about 3 minutes). Add the chopped garlic and saute for another minute.

Drain the thawed spinach and add to the onions as well as all of the seasonings. Continue to saute spinach for 3-5 mintues. Salt to taste.
