Introduction

Number of Servings: 8

Ingredients

    100 grams dates (3 1/2 oz)
    1 cup apple juice
    1/2 tsp baking soda (bi-carbonate of soda)
    1 cup of self raising flour (or 1 cup of cake flour and 1 tsp baking powder)
    1/2 cup unsweetened cocoa powder
    1 1/2 tsp vanilla extract
    4 egg whites
    3/4 cup Splenda
    2 tsp powdered (Icing) sugar

Directions

Place dates, apple juice and baking soda into a saucepan and bring to the boil. Remove from heat, cover and leave to cool. When cool, blend in a food processor until smooth.

Line a 7 - 8 inch (18cm) cake pan with baking paper.

Preheat oven to 335 deg F (179 deg C).

Sift the flour and the cocoa powder into a bowl and stir in the date puree and the vanilla extract.

Beat egg whites until stiff adding Splenda gradually. Fold half the egg whites into the date mixture, then fold in remaining egg whites (if mixture is a little dry add 1 - 2 tblspn of Water or nonfat milk).

Spoon mixture into prepared pan and bake for @35 minutes until a skewer inserted into the middle comes out clean. Cool on a rack and serve, dusted with the 2 tsp of powdered sugar.

NOTE: The date puree replaces the fat content, you could try prunes as a substitute and puree them, the juice could be replaced with another.
If you want to use sugar instead of Splenda use 1/3 cup unpacked Brown Sugar and add another 22 calories to each serve.

    This is a Wonderful cake that cures the chocolate craving and toppins with a tsp of smuckers sugar free jelly in flavor of choice and a small tbl spoon of sugar free whip cream for a treat for less than 200 calories a slice. YUmmy!! - 2/25/08

    I made these a for Valentine's Day (today) but baked them in these bunt shaped cupcake pan. I believe I used about a cup + of the dates (I used a kitchen scale). I tasted one of them and loved it... plus my roommates licked the bowl clean! I'll for sure make this again! - 2/14/08

    I did some things wrong, but it still came out really great. First, forgot to add the baking soda. I don't know if it was that or that I used egg beaters egg whites. I added walnuts, Craisins (chunky puree) and used Earth Wise berry medley. Wow. I ended up with a berry chocolate cake. LOVE THIS! - 1/8/13

    Glad you liked it. The baking soda helps to break down the dates and to make the cake a little lighter. The first time I tried this before I posted it I put the baking soda in at the wrong time, it still turned out OK

    omg..so good ! I used the 2 tsp of espresso instant powder and 1/3 cup brown sugar instead of splenda. Also only 1 tsp of powdered sugar on top (it was plenty). I can't wait to try with diet soda or mango juice as some suggested.. is it the same quantity coke as apple juice ? Great as is though.. - 3/24/11
