I have made this hundreds of times over the years and it is especially a hit at BBQs and picnics.

Ingredients

1 lb. bag of bagged coleslaw mix (or 1 c raw grated carrot and 6 c grated cabbage)
1/4 c fat-free mayo
1/2 c fat-free sour cream
2 1/2 Tbsp. cider vinegar
1 tsp. Dijon mustard
1/8 t. salt
1/8 t. pepper
1/4 t. paprika
1/4 t. caraway seed
2 packettes Splenda or Sweet 'n Low (optional, depends on your taste buds)
Directions
Put the cabbage/carrot mixture in a non-reactive bowl. (aka NOT metal)
Mix the rest of the ingredients -- except for the sweetener --- in a bowl and fold into the cabbage.
Sweeten to taste and add some more seasonings if you desire.
Cover with cling film and let sit in the fridge for at least 3 -4 hours -- taste and adjust seasonings if desired.
Stir well and serve cold.
