Ingredients

    1 lb lentils
    2 cups frozen chopped onions with bell pepper
    1 can (15oz) diced tomatoes
    6 c. water
    1 bay leaf
    1 tsp salt
    1 tsp cumin
    1 medium diced potato

Directions

no need to sautee veggies unless you want to. Rinse lentils, add all ingredients into a large sauce pan on high heat heat until boiling.Lower heat, cover and simmer until tender. About 1 hr to 1 hr 30min. Stir occasionally. Serve with biscuits or with brown rice (not calculated in nutritional values).

Makes approx. 9 - 1 cup servings

    My family loved this recipe. We used fresh rather than frozen onions, and added a half teaspoon more salt. When I made it a second time I used half red lentils and cooked in crock pot. When using the crock pot I boiled the water and added to other ingredients. Served with brown rice and cheese - 10/30/09

    Well it sounds really good i actually used a little of everyone's comments...used dehydrated onions and put in squash also and a little extra spices....smells delicious!!!! - 1/12/11

    Tried making it and it came out delicious! I added a few items like chilis Serranos(to give it a kick), cilantro and garlic. At the end I also added a squirt of lemon and that completed the stew! - 1/12/11

    Very Good! Easy to make and you can substitute favorite vegetables. I use a sweet potato instead of regular potato and spice it a bit with pepper flakes and cumin. - 1/12/11

    My 12 year old son makes this with Better Than Broth beef broth (health food store) and diced ham. It is yummy and still reasonable in calorie count. He also sometimes adds a 15 oz. can of tomato sauce. Great for a cold day like today (High of 11 degrees celsius!) - 12/11/13
