Ingredients

    5 cups Red Potatoes, peeled and boiled
    5 Large Hard Boiled Egg Whites, peeled and chopped, discard yolks
    1 tsp. French's Classic Yellow Mustard
    5 Tbsp. Miracle Whip Fat Free Salad Dressing
    2 Tbsp. White Distilled Vinegar
    2 med. Dill Pickles, low sodium,chopped
    Salt and Pepper to taste

Directions

Peel and chop potatoes into 1 inch pieces. Place in appropriate sized pot and fill with water just until potatoes are covered. Cook over medium heat until potatoes are soft; approximately 25 minutes. While potatoes are cooking, in separate pot, place eggs, water just until eggs are covered and 1 tsp. salt. Bring to a boil, turn off heat, cover and let sit for 20 minutes.
When potatoes are softened, pour potatoes into strainer to remove water. Put potatoes back into pan. Stir in mustard, Miracle Whip, vinegar, pickles, and salt and pepper. Peel eggs, discard yolks, chop, and add to mixture. Stir well. Some of the potatoes will be chunky. Serve warm or put in fridge to cool. Makes 10 - 1/2 cup servings.

    This was very good--the only potato salad for us! To avoid the potatoes' increasing my refrigerator's ambient temp, I rinsed them in cold H2o first.
    Added chives, parsley & onions; next time will add celery and/or a bit of broccoli slaw. This only needs some "crunch". I cut the vinegar a bit. YUM!

    I really messed with this recipe. I only have regular Mayo, so I used low fat cottage cheese for the dressing along with 1 TB sour cream. After mixing it all up, I dished out two servings for myself, then added the egg yolks and a dollop of Mayo to the remainder for my family. They loved it. - 1/23/10

    Very good! Instead of adding the pickles. I added celery! I also put a little more mustard! Turned out great. I did not have the Fat Free Miracle Whip so I used light.... So good. Thanks - 7/11/11
