Introduction

Ingredients

    Place all these ingredients in a ziploc baggie:

    1/2 cup buckwheat flour
    1 cup whole wheat flour
    1 tsp baking powder
    1/4 tsp baking soda
    3 tsp powdered egg replacer
    2/3 cup dried blueberries

    When you want to make the pancakes, add (per serving) although NOT included in the nutrtional info. You can also use different ingredients. Yogurt or sour cream, milk, etc:
    1 tbsp ricotta, yogurt or sour cream
    1/4 cup apple or orange juice, milk or water
    1/2 tsp oil


Directions

Make as much dry mix as you wish. When ready to make pancakes use 1/3 cup of mix and add extra ingredients and oil.
Cook on a hot griddle and flip once. Cook until browned.

Makes 7 servings. 1/3 cup of mix each

    Thanks Laura! I only rated 3 not because it wasn't good but because I am not a big fan of buckwheat. Hubby though loved them (he would have rated them as 4/5). We made a batch with blueberries and another batch with pecans. - 12/13/09
