Ingredients

    2 TBSP Extra light Olive Oil
    1.5 lb Beef (round steak sliced into pieces)
    2 Garlic Cloves (minced)
    1.5 Cups mushrooms, fresh (sliced)
    1.5 Cups Onions (chopped)
    3 Cups Beef Broth
    3 TBSP Ketchup
    1/3 cup of water
    3 Tablespoons Corn Starch
    1 Cup Fat Free Sour Cream
    4 Cups Mashed Potatoes


Directions

Heat oil in skillet over medium heat, add beef cook until browned, add garlic, mushroom, and onion cook until tender. Add beef broth and ketchup bring to boil. In small bowl mix water with corn starch, stir into skillet once thickened add sour cream, cook until well blended. Serve over mashed potatoes.
