Ingredients

- 1 cup bulgar wheat, dry
- 1 1/2 cup boiling water
- 1/4 cup lemon juice
- 1/4 cup olive oil (use less if you prefer)
-- 2 cloves garlic, minced
- 4 scallions, minced
- 1 packed cup of parsley, minced
- 10 - 15 mint leaves OR 1-2 tbsp dried mint, chopped
- 2 medium tomatoes, diced
- 1 cup cucumber, diced
Directions

- Put the bulgar in the bowl, cover with boiling water and let stand until tender (at least 20 minutes)
