Number of Servings: 8


    1 medium onion, chopped
    1 lb ground turkey
    1 tsp garllic
    4 oz can of green peppers
    8 oz can of tomato sauce
    32 ounce can of enchilada sauce
    12 corn tortillas
    4 ounces of lowfat mozzerella cheese
    1/3 cup of green onions, sliced

    Whole Milk yogurt or Sour Cream to add 1 TBS on each serving


Brown turkey, onion and garlic in a pan. Add peppers. Set aside.
Mix tomato sauce and enchilada sauce together. Add enough to the bottom of a cassarole dish.
Slice 4 of the tortillas in tiny chunks, and sprinkle evenly.
Add 1/2 of meat mixture, then enchilada sauce.
Layer 4 more tortillas, the rest of the meat and sauce.
Top with tortillas and enchilada sauce, green onions and cheese.
Cook at 350 for 30 minutes.
Let stand for 5-10 minutes.
Serve with a TBS of Whole Milk yogurt on top of each serving.
