Introduction

Stir-Fry Chicken - "More from the Gluten-Free Gourmet"

Asian Twist...tastes like the restaurants.
Serve steamed white rice on the side, get that going before hand so it will be ready when the chicken is done.

Ingredients

    2 boneless chicken breasts
    3 TB peanut oil
    1 cup sliced celery
    1small clove garlic, minced
    1-14.5 oz can chicken broth
    2 TB GF soy sauce
1 TB candied ginger, finely chopped
1-8 oz package frozen chinese pea pods
    1 cup sliced fresh mushrooms
    2 TB cornstarch
    3-4 TB water
    salt to taste
    1/4 cup toasted slivered almonds

Directions

Slice the chicken into long, thin strips. Using a wok or heavy frying pan, heat the oil, then add the chicken and saute for 5 min. Stir in celery and garlic and continue cooking for another 3 min.
Add the chicken broth, soy sauce, and ginger. Heat to boiling before adding the pea pods and mushrooms. Cover and simmer for 5 min (do not overcook).
Mix the cornstarch and the water. Stir into the chicken mixture and cook until the liquid thickens, 1-2 min. Taste and add salt if necessary (this will depend on the saltiness of the broth).
Pour the stir-fry onto a round serving platter immediately and top with the almonds. Serve rice separately.
