The cals are a little high on this, but it's only because it's 2 servings. You could always increase the serving size to 4 and eat with a super large yummy salad or some roasted veggies. Ingredients

    3/4 c. red lentils
    1 cup of diced frozen peppers and onions
    3 minced garlic cloves
    1/2 can of whole or sliced water chestnuts
    1/2 a 10z box of frozen spinahc
    1.5 cup of Organic Vegetable Stock
    1 c of canned diced tomatoes
    1c of light coconut milk
    .5 TBS of EVOO
    1/4 c of 0% Greek Yogurt
    Spices (coriander, cumin, garlic powder, garam masala, and a pinch of cayenne pepper or crushed red pepper flake)
    Garnish with cilantro


Directions

Saute onions, peppers, and garlic in EVOO, Add spices except cilantro and cook 1 extra minute. Then add the remaining ingredients (except, cilantro and yogurt) and cook for 30-40 minutes uncovered under a low flame. Garnish with cilantro and serve yogurt on the side (or you could stir it in at the end!)
