2 pounds fresh okra, tops and ends cut off and either sliced or left whole, or 2 pounds fresh green beans, snapped.
1 large onion, chopped
2 tbsp olive oil
1 tsp salt (more or less to taste)
1 can tomato sauce
Directions
6 one cup servings (nutrition info is for okra, salt is included)
In a large saucepan, fry the onions in the olive oil until soft. Add the okra or green beans and fry a few minutes. Add the tomato sauce and about a can of water to the saucepan; cover and simmer about an hour until the okra or beans are very soft. Add salt and serve with pita bread. Can be eaten hot, cold or at room temp. you can add garlic or hot pepper if you like it a bit more spicy.
