Introduction

A nice raw dish, full of flavour and very colourful. Give it as much or as little bite as you want by adjusting the seasonings. A nice raw dish, full of flavour and very colourful. Give it as much or as little bite as you want by adjusting the seasonings.

Ingredients

    1 mango - unripe, julienned *use a julienne 'peeler' to make quick work of this!
    1 red pepper, also julienned
    * both should be cut into matchstick sized pieces.
    Juice of 1 lime
    2 T Rice wine vinegar
    .25 tsp each grated garlic and ginger
    1 Tablespoon lite soy sauce
    1 or more Tbsp fresh coriander leaves, washed and chopped
    a pinch of dried hot red pepper flakes
    1T chopped peanuts

Directions

Toss it all together and let stand for 1 hour in the fridge before serving.
Top with chopped peanuts and serve with stir fried tofu or chicken, rice noodles and peanut sauce to roll in lettuce leaves for a complete meal.
