Introduction

Ingredients

    2 oz of brown rice pasta (or your favorite gluten-free!)

    2 links of Italian sausage
    1/4 each of red, orange, and yellow peppers, diced
    1 cup chopped asparagus
    1 small shallot, diced

    1/4 cup of your favorite stock
    2 tbsp apple cider vinegar
    2 tbsp dry sherry

    Sundried tomatoes, chopped, no oil

    Spices to taste:
    onion powder
    garlic powder
    sea salt
    thyme

    2 oz Feta Cheese

Directions

Cook pasta as directed

Crumble and brown sausage in some of the stock

Add peppers, asparagus, and shallots and saute until tender, adding more stock as needed

Add remaining stock, vinegar, and sherry, sundried tomatoes and spices, continue to cook in sauce for about 5-10 minutes, until there's just a bit of liquid left.

Add al dente pasta and toss together over medium heat for 1-2 minutes

Serve topped with feta
