Introduction

Ingredients

    2 c. (uncooked) brown rice (prepared early and cooled in fridge)

    2 boneless, skinless chicken brests - grilled and cubed small

    1 tbls olive oil
    1 tbls margarine
    1 c. frozen peas
    1/2 c. scallions, chopped
    1/4 c. low sodium soy sauce
    3/4 tsp. black pepper
    2 large eggs
    2 large egg whites
    2 tbls water


Directions

Prepare 4 servings (2 c. uncooked brown rice) according to package instructions. Place spread out on a plate in fridge to cool completely.

Trim fat from chicken breasts then season and grill. Chop into tiny cubes.

In large pan or wok melt olive oil and butter together. Toss in frozen peas and diced scallions. Simmer on medium heat for about 3 minutes. Add in cold rice, soy sauce, and pepper. Stir well. Cook covered about 3 minutes. Add in cubed chicken and mix. Cover and cook for about 10 minutes stirring occasionally.

In another bowl beat eggs with egg whites and 2 TBLS water.

Turn heat up on pan to med/high and add in beten eggs stiring the rice continually until the egg is cooked and evenly distributed.

Serve hot and enjoy!
