Introduction

This is my favorite way to get my boyfriend to finish his veggies! It helps that it's easy to prepare, and can be modified to suit your likes/dislikes. Try adding peppers or another favorite veggie for variety.
I like to serve the leftovers over pasta or rice - sometimes I'll add leftover chicken for a quick leftovers meal.

Ingredients

    1 tablespoon olive oil
    1/2 medium onion - finely chopped
    3 minced garlic cloves
    4 cups fresh mushrooms, sliced
    2 10-12oz packages prewashed baby spinach or 2 bunches spinach, rinsed, with stems removed
    5 oz extra sharp white Vermont cheddar cheese
    1/8 cup Progresso breadcrumbs (Garlic or Italian)

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
2. Saute onion and garlic until tenter. Add mushrooms and saute until slightly soft. Add fresh ground pepper to taste.
3. Meanwhile, microwave spinach for 2 minutes. (If you washed the spinach, or are substituting frozen spinach, be sure to remove as much excess water as possible!) Place in prepared baking dish and top with onion mushroom mixture. Sprinkle cheese evenly over top, and breadcrumbs over the top of the cheese.
4. Bake in preheated oven for 20 minutes.

Let cool for 5 minutes before scooping out with a spatula or spoon. Also good cold out of the tupperware the next day! :)
