Introduction
This is a staple in our vegetarian home. It's also a super healthy dish that I always know my 2 yr old will eat. The recipe below is basic. Normally, you would have more herbs. I usually use a mix of whatever herbs and greens I have on hand - parsely (fresh), mint (fresh or dry), chives, collards, kale, even dandelion greens from my lawn. Just be careful with too much kale or dandelions, as it can make it bitter. This dish is great cold the next day also and is traditionally served with dairy - goat's cheese, sour yoghurt, feta, etc. This is a staple in our vegetarian home. 1 Leeks
Swiss Chard, 1 cup, chopped
Beet greens, fresh, 10 leaf
Turmeric, ground, 1 tsp
Salt, 1 tsp
Egg, fresh, 5 large
Whole Wheat Flour, 2 TBSP
Safflower Oil, 2.5 tbsp
Directions
Chop greens and leeks thinly
Add salt, eggs, four and turmeric.
Pour half of oil in bottom of pan, high heat.
When oil is hot, pour in mixture.
Flatten in pan to about an inch, cover, turn down heat until eggs set (about 10 minutes)
Cut into wedges in pan, take out and add remaining oil to pan.
Return wedges upside down to fry crisp the other side - high heat for 5 minutes.
Servings are about 2 inches square.
