Introduction

Ingredients

    4 slices Canadian bacon
    2 tsp olive oil
    1 onion, chopped
    1 clove garlic, chopped
    16 oz chicken broth (2 cups)
    16 oz water (2 cups)
    16 oz cooked chicken, chopped
    2-15.5 oz cans of white beans, rinsed
    1 cup frozen corn
    Adobo seasoning to taste
    Salt and pepper

Directions

In a large pot heat the oil and add the bacon. Heat until cooked, about 5 minutes. Add the onion and garlic. Cook until soft, about 5 minutes. Add chicken broth and water and let come up to a gentle boil. Add all remaining ingredients and simmer until everything is heated through (about 15 minutes). If you like a thicker stew, thicken with 1 tbsp cornstarch mixed with a little water (calories not included).
