Sweet Cherries, 1.5 cup, without pits (remove)
Orange Juice, .75 cup (remove)
**Flax Seed Meal (ground flax), 10.6 tbsp (remove)
*Whole Wheat Flour, 1.666 cup (remove)
Baking Powder, 1.5 tsp (remove)
Baking Soda, .5 tsp (remove)
Salt, .25 tsp (remove)
Egg, fresh, 1 large (remove)
Granulated Sugar, .5 cup (remove)
Olive Oil, Extra Virgin, 4 tbs (remove)
Vanilla Extract, 1 tsp (remove)
Mixed Nuts, dry roasted (salt added), .5 cup (remove)
Directions
1. Preheat oven to 350.
2.Chop cranberries and nuts in food processor
3. Grate orange zest to 2 Tbsp
4. juice oranges to 3/4 cup. Add juice if needed.
5. Combine all dry ingredients except sugar.
6. Whisk together egg, sugar, oil, vanilla, OJ, and orange zest.
7. Combine wet and dry ingredients. Fold in cranberries and nuts.
8. Bake in a 4x8 loaf pan. Make sure you spray it.
