Introduction

This is a super fast and easy dinner that is great on hot summer days and makes good leftovers. Serve with whole wheat garlic bread and salad. This is a super fast and easy dinner that is great on hot summer days and makes good leftovers. Serve with whole wheat garlic bread and salad.

Ingredients

    1 box Barilla Plus pasta of your choice
    2 cans diced tomatoes, strained
    1 bunch of basil
    1 cup grated parmesan cheese
    3/4 cup milk
    Fresh ground black pepper to taste

Directions

Prepare pasta according to instructions.
While the pasta cooks, combine the strained tomatoes and basil in a food processor and blend. Heat the oil in a saute pan and add the tomato/basil mixture. Once mixture is heated add the milk and black pepper. Allow to combine, about 2 minutes. Add the parmesan and allow to melt. Once melted, stir into strained pasta. Top with a sprinkling of fresh parmesan and basil leaves. Enjoy!
